Ingredients:

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup sugar
  • ¾ cup desiccated coconut
  • 125 g butter
  • 2 tbs Golden Syrup
  • ½ tsp bicarb soda
  • 1 tbs boiling water

Method:

  1. Preheat oven at 150 °C.
  2. Combine oats, sifted flour, sugar and coconut in a mixing bowl. 
  3. Combine butter and golden syrup in a saucepan and stir over gentle heat until melted. 
  4. Mix soda with boiling water, add to melted butter mixture.  Stir into the dry ingredients until combined. 
  5. Take teaspoons full of mixture and place on lightly greased oven tray.  Allow room for spreading. 
  6. Bake for 15 – 20 minute
  7. Loosen on tray and leave to cool.
