Apricot and Choc-Chip Cookies

Ingredients:- 100g butter, softened
- cup brown sugar
- 1 egg
- 1 teaspoon vanilla essence
- 1/1/2 cups plain flour or gluten-free flour
- teaspoon baking powder
- cup milk or dark choc bits
- cup dried apricots, diced
Method:- Pre-heat oven to 180C. Cream butter and sugar in a mixing bowl until light and fluffy. Add egg and vanilla essence and beat well.
- Sift in flour and baking powder and combine with a wooden spoon. Stir in choc bits and apricots.
- Place tablespoons onto a baking tray lined with baking paper and press down with a fork to flatten.
- Bake for 12-15 minutes. Leave to cool.
