Diamiond-Cut Chocolate and Apple Brownies

Ingredients:- ½ cup of unsalted butter;
- 60g unsweetened chocolate;
- 2 free range eggs;
- 1 cup of caster sugar;
- 1 cup of all-purpose flour;
- ½ teaspoon of baking powder;
- Pinch of salt;
- 1 cup of walnuts, roughly chopped;
- 1 apple (Golden Delicious) peeled and roughly chopped;
- 1 teaspoon of vanilla extract; and
- Icing sugar for serving.
Method:- Place the butter and chocolate into a heatproof bowl and melt over a pot of simmering water. Be careful that the water does not touch the base of the bowl.
- In a separate bowl whisk the eggs and sugar together until pale in colour and the sugar has dissolved.
- Fold the melted chocolate mixture into the egg mixture followed by the flour, baking powder, pinch of salt, walnuts, chopped apple and the vanilla extract.
- Pour the mixture into a greased 20cm square baking tin and bake in a pre-heated oven on 180C for 30 minutes.
- Once cooled turn the brownie out and slice into diamond shapes or squares.
- Dust with icing sugar and serve warm or at room temperature.
