Diamiond-Cut Chocolate and Apple Brownies

Ingredients:

  • ½ cup of unsalted butter;
  • 60g unsweetened chocolate;
  • 2 free range eggs;
  • 1 cup of caster sugar;
  • 1 cup of all-purpose flour;
  • ½ teaspoon of baking powder;
  • Pinch of salt;
  • 1 cup of walnuts, roughly chopped;
  • 1 apple (Golden Delicious) peeled and roughly chopped;
  • 1 teaspoon of vanilla extract; and
  • Icing sugar for serving.

Method:

  1. Place the butter and chocolate into a heatproof bowl and melt over a pot of simmering water. Be careful that the water does not touch the base of the bowl.
  2. In a separate bowl whisk the eggs and sugar together until pale in colour and the sugar has dissolved.
  3. Fold the melted chocolate mixture into the egg mixture followed by the flour, baking powder, pinch of salt, walnuts, chopped apple and the vanilla extract.
  4. Pour the mixture into a greased 20cm square baking tin and bake in a pre-heated oven on 180C for 30 minutes.
  5. Once cooled turn the brownie out and slice into diamond shapes or squares.
  6. Dust with icing sugar and serve warm or at room temperature.
