Ingredients:

  • 250g plain flour                                                     
  • 3tsp  ground ginger                                             
  • 100g golden syrup
  • 50g butter                                                            
  • 60g brown sugar
  • ½ tsp baking soda                                              
  • 1 egg (lightly beaten) 

For the Icing:

  • 100g icing sugar
  • 1tblsp boiling water    

Method:

  1. Preheat the oven to 200c
  2. Sift the flour and ginger together into a bowl
  3. Combine the butter, golden syrup and brown sugar in a small saucepan. Stir over a low heat until the butter has melted.
  4. Stir in the baking soda.
  5. Add butter mixture an egg to the flour and ginger.
  6. Mix to a soft dough. Turn out on to a lightly floured surface.
  7. Knead for about 2 minutes until smooth.
  8. Roll dough out to about 3ml.
  9. Using a gingerbread person cutter cut out people, place on a baking tray lined with baking paper.
  10. Bring the leftovers together and re-roll cutting out more people repeating until all the dough has been used.
  11. Bake at 180c for 12-15 minutes until golden. Leave on the tray for 5 minutes then transfer to wire cooling racks and allow to cool.

Icing:

  1. Sift the icing sugar into a bowl and mix the boiling water till you have a glossy smooth paste.
  2. Decorate your people using a piping bag with the smallest nozzle
