Healthy Chicken Burger

Ingredients:

  • 500g chicken mince
  • 3 garlic cloves
  • 1 onion – brown
  • 1 med zucchini
  • 2 stalks celery
  • 1 tsp mixed herbs
  • 1 cup wholegrain breadcrumbs
  • 2 eggs
  • 1 tsp chicken stock

Method:

  1. Place garlic, celery and onion into food processor and pulse into pulp.
  2. Add zucchini and blend.
  3. Place mince in large bowl and add pulp from processor, breadcrumbs, mixed herbs, eggs and chicken stock.  Mix until all combined.
  4. Divide mixture into 10 equal parts and shape into patties.
  5. Heat pan and spray with cooking oil.  When hot, cook patties for 4-5mins on each side until cooked through. 
  6. Serve on a wholemeal roll with lettuce and mayonnaise.
