Orange & Coconut cake

Ingredients:- 190g butter, softened
- 1 cup castor sugar
- zest from one orange
- 1 teaspoon vanilla essence
- 3 eggs
- 2 cups plain flour
- 2 teaspoons baking powder
- ½ cup coconut flakes (or dessicated)
- 3 tablespoons milk
- 2 oranges
Method:- Grease a 6” cake tin and put to one side.
- Preheat oven to 180ºC.
- In a mixing bowl, beat butter, sugar and orange zest until pale in colour (approx 5 min).
- Add vanilla essence then one egg at a time, beating between each egg until well mixed.
- Sift flour and baking powder together then fold in all dry ingredients followed by the milk.
- Put mixture into the cake tin then place orange slices from one of the oranges on top of cake.
- Bake cake in the oven for one hour or until cake is firm and golden.
- Remove from oven and squeeze juice of last orange over the top while cake is still warm.
- Leave to cool then store in an airtight container.
Notes:- This is a quick and relatively simple cake to make. You can swap the orange for lemons or grate in some apple for some added flavour.
- I leave it out of the fridge for best results.
