Ingredients:
Pikelet Batter:
- 2 ½ cups self raising flour
- 2 cups milk
- 4 eggs
- 4 tablespoons of sugar
- 2 tablespoons vanilla sugar
Ricotta Filling:
- 300g fresh ricotta
- 2 tablespoons sugar
- zest of 1 lemon
Method:
- Mix pikelet batter together in a blender.
- Mix ricotta with sugar and lemon zest.
- Heat gourmet griddle to medium.
- Place tablespoon of batter in griddle.
- Place a teaspoon of ricotta filling in middle of batter.
- Cook until bubbles appear, then flip over to brown other side.
- Sprinkle icing sugar over pikelets and serve.
