Ingredients:

Pikelet Batter:

  • 2 ½ cups self raising flour
  • 2 cups milk
  • 4 eggs
  • 4 tablespoons of sugar
  • 2 tablespoons vanilla sugar

Ricotta Filling:

  • 300g fresh ricotta
  • 2 tablespoons sugar
  • zest of 1 lemon

Method:

  1. Mix pikelet batter together in a blender.
  2. Mix ricotta with sugar and lemon zest.
  3. Heat gourmet griddle to medium.
  4. Place tablespoon of batter in griddle.
  5. Place a teaspoon of ricotta filling in middle of batter.
  6. Cook until bubbles appear, then flip over to brown other side.
  7. Sprinkle icing sugar over pikelets and serve.
