Scotch fillet with garlic and chilli butter

Ingredients:

  • 50g unsalted butter, softened
  • 2 large cloves garlic, peeled and finely grated
  • ½ teaspoon salt
  • ¼-1/2 teaspoon chili flakes (optional)
  • 1 heaped tablespoon parsley, chopped
  • 4 scotch fillet steaks
  • Salt and pepper to taste
  • Cooking spray oil

Method

  1. In a small bowl add garlic and salt then mix to combine.
  2. Add softened butter parsley and chilli flakes- beat until well combined.
  3. If using on the same day leave in the bowl until needed otherwise rip off a piece of foil, lightly spray with cooking spray and roll into a log shape. Twist ends so it looks like a lollie log then place in the freezer until needed.
  4. Cook steaks according to your preference, rest the meat covered in foil for 4-5 minutes then serve with lashings of butter on top of steak.

Notes:

  • If you are not keen on spice add pepper instead of chilli flakes however a small about of chilli will not give off a huge kick, it is really just for flavour, I serve this to my kids and they never complain about the heat.
  • Butter also works well is mash potatoes and over roast vegetables and even grilled prawns.
  • I served this meal with mash potatoes and roasted brussel sprouts.
