Ingredients

  • 500g new potatoes, skin on
  • 185g tin tuna, drained
  • 1 egg
  • ½ cup carrot, grated
  • ½ cup zucchini, grated
  • 1/3 cup corn kernels
  • ½ cup tasty cheese
  • ½ cup wholemeal flour
  • 3 tablespoon canola oil

Method

  1. Cut potatoes into quarters, put in a saucepan with cold salted water and bring to the boil. Once soft drain water and mash potatoes with the skin on.
  2. In a large mixing bowl add remaining ingredients except the oil.
  3. Add potato mash to bowl, season with salt and pepper then fold ingredients together until well combined.
  4. Form patties (I used a ¼ cup measurement for each pattie).
  5. Heat large frying pan; add oil then place in patties and fry until golden brown. You will have to do these is several batches for best results.
